GLUTEN FREE PANCAKES WITH ORGANIC GREEK YOGURT AND HONEY

Ingredients
  • 1¼ cups gluten free flour ( i use Doves Farm )
  • 1 egg
  • 1 cup organic low fat milk ( i prefer 2% fat)
  • ½ tsp baking powder
  • ½ tsp grounded cinnamon
  • 2 tbs low fat organic Greek yogurt
  • organic thyme Honey ( i use Greek honey )
  • 1 tsp butter ( for the pan )
Instructions
  1. Beat the egg until fluffy and then add the milk.
  2. In a mixing bowl , put together all the dry ingredients and mix them. ( if you don't want your mixture to have lumps then you have to sift the flour first )
  3. Then add your dry ingredients into the milk and egg and whisk for a few minutes until you have a nice creamy batter. ( If the batter seems to be too thick then add a little more milk )
  4. Set a skillet on medium heat , and add some butter until its hot.
  5. Place the batter to the skillet adjusting the size as you prefer.
  6. Cook about 1 minute until bubbles appear and them flip them. Cook for another minute.
  7. Serve the pancakes with organic yogurt and Greek thyme honey on top.
Notes
You can choose more toppings for your pancakes such as almonds, walnuts, raisins or anything else you want.
