Chocolate Beet Cake

Ingredients
  • 3 medium boiled beets , cooled
  • 1 cup canola or sunflower oil
  • ¾ cup brown sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups all purpose flour ( you can use gluten free )
  • ¾ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt ( i use himalayan salt )
  • For the yogurt topping( optional )
  • 4 tsp greek yogurt
  • ½ cup powdered sugar
  • a few drops of almond extract
Instructions
  1. Preheat oven to 350 F ( 180 c )
  2. Butter a bunt pan and sprinkle it with cocoa powder
  3. Grate the beets and let them drain into a colander
  4. In a stand mixer bowl put together the oil and brown sugar until smooth.
  5. Add one egg at a time and vanilla extract.Give this batter a good mix for 1 min.
  6. In a mixing bowl put all the dry ingredients together and give a mix. Add them to the wet ingredients and give a mix.
  7. Add the grated beets into the batter and gently mix with a spatula.
  8. Fold the batter into the cake pan. Bake for 40 mins. After, remove from the oven and let it cool before removing the cake for 20 mins.
  9. Enjoy it plain or with the yogurt topping ( optional )
